Zucchini Skillet

1lb. gr. beef or 1lb. firm tofu
1 c. chopped onion
3/4 c. chopped pepper, any color
1 clove garlic, minced
1 1/2 t. salt
1/4 t. pepper
1 t. chili powder
5 c. sliced zucchini, use variety
2 tomatoes, chopped
11/4 c. corn
2 T. chopped pimento
1/4 c. chopped parsley/basil

Sauté beef/tofu, onion, pepper, garlic.  Add remaining ingredients.  Cover and simmer 10-15 min.

These I made up: for breakfast or lunch.

Stack corn tortillas with tomato and  mozzarella slices.  Heat, then add hot sauce and fresh basil.
OR
Stack corn tortillas with mozzarella slices.  Heat, then add tomato salsa (use any Waterpenny recipe).
OR
Stack corn tortillas with black beans, salsa or tomato slices, and cheese.  Heat and top with basil/hot sauce.
