1 cup sugar
2 tablespoons flour
1 cup milk
1 cup vinegar
salt and pepper — to taste
4 cups lettuce
2 scallions
Beat eggs. mix flour and sugar and add to eggs. Add milk mixing thoroughly.
Mix in vinegar stirring constantly to prevent curdling. Cook over medium heat until thickened. Salt and pepper to taste.
Add 1/2 of dressing to lettuce and scallions. Mix and cover to let heat wilt the lettuce. Makes 2 batches.
