Broccoli Basil Soup

 

 

1 chopped onion

1 chopped garlic clove

1 tablespoon olive oil

1 large chopped potato

2 1/2 cups vegetable stock

1 large broccoli head, chopped,

a bunch of fresh basil

1/2 cup milk

1.Fry 1 chopped onion and 1 chopped garlic clove in 1 tablespoon olive oil for 5 minutes. Add 1 large chopped potato and fry for 5 minutes.

2.Add vegetable stock, 1 large broccoli head, chopped, and simmer for 15 minutes.

3.Add a bunch of fresh basil and 1/2 cup milk. Season. Reserving a few florets, puree the soup, then reheat and serve, topped with pieces of broccoli.
