Wash about 1 pound of sweet potatoes; peel them if desired.
Preheat oven to 400 degrees
Cut up the sweet potatoes into 1/2 –3/4 inch pieces. The smaller the pieces, the faster they will cook.
Put into a 9X12 baking pan, and add:
1/4 cup canola oil
1 tsp sea salt
2 tsp rosemary
2 tsp oregano
2 tsp basil
1/2 tsp paprika
Pepper to taste
(add or omit herbs to taste)
Toss to thoroughly coat potatoes with oil and herbs. Bake for about 30 minutes, stirring
occasionally. Test potatoes with a fork to tell when they’re done.
