I like to mix the two kinds of potatoes best, but it works well with just one kind or the other. This recipe can be creatively altered, and will be great as long as you start with good potatoes. ~~Rachel
2 pounds of mixed potatoes and sweet potatoes
1/4 cup canola oil
2 tsp sea salt
2 tsp rosemary
2 tsp oregano
2 tsp basil
1 tsp paprika
Pepper to taste
(any other herbs that come to mind)
Preheat oven to 400 degrees. Wash potatoes and sweet potatoes, do not peel them.
Cut up the sweet potatoes and potatoes into 1/2 –3/4 inch pieces. The smaller the pieces, the faster they will cook. Put into a 9X12 baking pan, and add oil and spices.
Toss to thoroughly coat potatoes with oil and herbs. Bake for about 30 minutes, stirring occasionally. Test potatoes with a fork to tell when they’re done.
