6 medium tomatoes – peeled and seeded
3 C water
1 C chopped onion
6 oz tomato paste
2 tsp sugar
1/4 C chopped, fresh cilantro
4 ribs celery
4 tsp lemon juice
4 chicken or vegetable bouillon cubes
hot sauce, salt, pepper to taste
Chop tomatoes, slice celery.
In large soup pot add water, onion, sugar, tomato paste, cilantro, lemon juice, bouillon, tomatoes, celery and hot sauce.
Bring to a boil then lower heat, cover and simmer for at least 20 minutes.
Cool, then blend in blender until smooth (or omit this step and serve chunky).
Return to pot, re-heat, add salt and pepper to taste and serve
